The first FungusAmongUs Recipe & Review

I approached FungusAmongUs the day that I discovered them. Why? I love companies that make their personal  “Gourmet” accessible to the masses… and I liked their name.

I received a package in no time, here is what was sent:

Moroccan Porcini & Green Lentil Soup (Organic, Vegan, Low Fat, Low Carb, Gluten, Dairy, and Cholesterol Free)

Spicy Shitake Vegetable Soup (Organic, Vegan, Low Fat, Low Carb, Gluten, Dairy, and Cholesterol Free)

Smoked Oyster Mushroom Chowder ( Organic, Vegetarian, Gluten Free, Non-Fat, and Low Carb)

Mushroom Melange- Fiesta Blend (Organic, Vegan)

Mushroom Melange- Pacific Blend (Organic, Vegan)

Mushroom Melange- Mediterranean Blend (Organic, Vegan)

Which will be the first ingredient for my mad scientist cravings?

I chose to make Shitake & Vegetable Rice Pilaf <my own version>

What I used:

1 Package FungusAmongUs Spicy Shitake & Vegetable Soup

1 Tbs. FungusAmongUs Mushroom Melange Pacific Blend

3 Ripe roma tomatoes

4 Cups water

2 cups rice <any kind you like is fine.>

¼ cup flour

2 tbsp Olive oil

1 sauté pan <I used an uber tiny one>

Pour 1 pkg. Spicy Shitake and Vegetable Soup into a 6-cup saucepan with 4 cups of water.

Simmer uncovered on medium heat for 20 minutes.

Cook your rice to your taste.

 

Take the tomatoes and slice them. <about 1/2 inch thick>

 

Get your sauté pan and pour the 2 tbsp oil and set on medium-high heat.

In a clean plate mix the flour and Melange, then take your tomato slices coat them with flour and fry.

 

*Be very careful how long you fry them after about 60 seconds they turn into mush*I set the tomatoes on a paper towel to absorb all of the excess oil.

Once the soup has reduced to Sauce consistency turn heat off and plate.

 

 

As soon as the soup hit the water the kitchen was consumed by an amazing aroma. I was very impressed with the fact that the vegetables held their shape so well. This soup tasted as if someone had slaved over a hot stove for hours upon hours. Great amount of mushrooms! This entire meal took less than 45 minutes to prepare!

 

Price: Very Budget friendly     5 stars

*This wonderful soup is not twenty, fifteen, or even ten dollars. Worthy every penny and more. 17.97 for a pack of four.

*Not too busy, or plain.
